Parchment is fine on a bakign stone.

But if your stone is well-seasoned, it is virtually nonstick, and you don’t have to use cornmeal. The cornmeal yields a crispier crust and lets you use less oil, but is not necessary.

I’m going to try a homemade pizza dough recipe – and just realized I don’t have parchment paper?

I did the sauce last night, since it was too late to cook it all up, and planned on tackling the dough today, so it would all be ready to go tonight. I just ran into one little snag though.

I don’t have any parchment paper, which the recipe calls for to cook the dough on (on the pizza sheet) in the oven. For the moment, I don’t have any transportation to get to the store, and it’s raining. I do have plenty of time until I get to the point of cooking, but if for some reason I am still unable to make it to the store, is there anything I can replace it with? Or any way to adjust the cooking of it?

This is my first time trying something like this, so I don’t want to mess it up! Like I said, if it’s best to just wait and go get some, I can do that, I just wanted to double check first.

Thanks! =]
Well….. I don’t know why that wasn’t listed as an alternative, lol. I have tons of cooking spray, oils and even flour, so I think I’ll just do that instead! Thanks!

veganpizzaplace answers:

The parchment paper is to stop the dough sticking to the tray. You will see that this recipe calls for nonstick cooking spray:

http://www.greatpizzarecipes.com/Pizza-Recipes/pizza-dough/best-pizza-dough-recipe.php

so you could use that as an alternative. Don’t worry about it making the pizza dough soggy. Most pizzas are cooked at a very high temperature so any excess oil will just make the crust crispier rather than soggy, since it cooks fast.

Another option is to sprinkle cornmeal or flour on the baking tray. When you order a pizza in an Italian restaurant they are usually very floury underneath and the reason for that is the flour stops the pizza sticking to the rack in the pizza oven.

So if you really can’t get to the store use nonstick cooking spray (or a pastry brush with oil on, if you don’t have spray) or some flour or cornmeal in the dish instead. Then when it’s time to remove the pizza from the pizza sheet you can slide a spatula underneath (a wide one) to make sure it doesn’t stick and to scrape up any stubborn bits, so hopefully your pizza comes off in one piece.

Electric cooker vs. Gas cooker/oven?bill-wise?

I was wondering if it is wise to buy a GAS oven with cooker and grill and get rid of the electric one we have?It will definitely saves the space in the new Kitchen plans we have. We are on some dual fuel *shpower Online Energy plan. Opinions are divided and it is hard to count the Watts for baking a Pizza in each of them and many say Gas comes cheaper on central heating but not on grilling chicken. Can anybody give advice based on experience?
In calculating running cost one should also count the initial 300-500 quid for a separate Electric cooker.(the prospecting of having slightly wet Pizza in a GAS cooker is not important, cost is what we are worried about! But thanks for the tip, We can always buy a cheap electric cooker over the worktop)

veganpizzaplace answers:

Gas is a lot cheaper, but a bit more wasteful. To bake something in the oven, gas costs about half as much. For cooking on the hob, there’s not much in it. Gas is expensive for grilling since most of the heat is wasted. A good system is to have a gas cooker plus a microwave with a grill.

A gas oven tends to be wet and is best for baking bread. An electric oven is dry and is best for making cakes.

Dutch Ovens & Serious Food Allergies: Cleaning/Reseasoning?

Hey, I was wondering if anyone can help me out.

I have a very serious allergy to eggs. And I go on a lot of campouts. My group planned to make pizza in a dutch oven (they have a recipe). While the recipe does not call for eggs, stuff with eggs HAS been cooked in the dutch oven before. And with my allergies, any pots, pans, silverware, etc. has to be washed.

My question is this: We have a dutch oven (cast iron, I believe) that is seasoned but needs to be washed. VERY thouroughly. How do I do this? How do I reseason?

Thanks!
To clarify:

Yes, I have had blood work done. I have been positively allergic to eggs. Thank god I haven’t had to use my epi-pen yet, though I have to carry one with me wherever I go.

I am allergic to both egg white and yolk with 2.6 and 3.9 respectively. A minor allergy is about .3 or less, so it is life-threatening.

If you scrub it, you must re-season it. That’s the nature of an iron pot. Perhaps it would make more sense to buy a new one, and keep it for your own use, and never let anyone put eggs in it.

I’m a food snob with guilty secrets. We normally cook from scratch, with fresh ingredients if possible. For example, I used thawed frozen chicken breasts last night, but fresh shiitake mushrooms, ginger and onions to make chicken donburi for the family; and when I make spaghetti sauce, I use canned tomatoes because the crap that passes for “tomatoes” in the grocery store aren’t worth throwing at a bad actor. And even mac and cheese in our house starts with bechamel (made from real butter, flour and milk) before adding grated or cubed cheddar cheese (I like a white Irish cheddar, but my kids prefer Tillamook, and since the dairy is only about 50 miles away, it still counts as fresh, local produce.

And yet… I have been known to make Tater Tot Casserole for the family. It takes five minutes to throw together (including, yes, a can of condensed soup), cooks in the oven for 40-45 minutes, and the kids love it. It’s one of my wife’s childhood recipes, something her mom made for them when they were kids.

And on a dark night, when nobody’s watching, I will slink out to the kitchen, open a box of Cheez-Its, and spread them with peanut butter. Oh, the shame…

But I will not stoop to tuna-noodle casserole. If only because neither my son nor I will eat tuna after it has been spoiled by the application of heat. “Give it to us raw and wriggling, and keep nasssty chips” is our motto — maybe with a little soy sauce and a finger of cold steamed rice.

I wanna get toned and bigger muscles but at the same time gain like 2-3 more pounds. I just bought 100% whey protein double rich chocolate. When i wake up in the mornings for breakfast around 8:00 i have 1 hard boiled egg, with a glass of orange juice and a banana. Than i go to school and i have lunch at 10:50-11:30 but i don’t eat the school lunch. I then get out of school and 1:15 and i go to my local pizza shop and have a peperoni roll with a gatorade. A peperoni roll is a alright size circle piece dough with peperoni inside, baked in the oven. After i eat my peperoni roll and drink my gatorade i walk to the gym which is 5 minutes away. I get to the gym round 1:35 and i workout till 2:45. After the gym i walk home which is a 15 minute walk. When i get home its like 3:05 and i drink my Whey protein powder with milk. Than maybe 2 hrs later before lunch i have an apple. Than at like 6 i have dinner which is rice and beans and some other meat. Is that a good dinner to have or should i eat something else. Than after dinner what else should i eat before i go to sleep which is around 11? Anyways that’s what i usually have throughout the week. And i don’t drink anything else besides water and milk which is for the whey protein. Speaking of whey protein should i have it on the days i don’t workout and if so what time of day and how much should i have? Please can you guys help me and tell me if this is a good plan for me.

Yup, do your research.

Indoors? You would absolutely need a chimney.

Outdoors? I would bet that you will still need a chimney, and quite possibly some sort of air inlet, though perhaps it will pull enough air from the opening. You will need the oven to retain enough heat to cook really fast, so controlling where the ambient air enters, and how it leaves, will be important.

veganpizzaplace answers:

Yes, kiln brick can absorb lead from lead based glazes during a firing and redeposit it on your ware later during a firing. And you should never fire dinnerware in the same firing as ware with lead based glazes. You can get a kit from a hardware store to test your kiln for lead release. I am not sure how it works — if you can just test the bricks or if you have to fire the kiln.

Even so, I would not use those bricks for the wood fire pizza oven because they may not be food safe. It is much cheaper in the long run, and for your peace of mind to buy new bricks.

veganpizzaplace answers:

Your best bet is to invest in an infrared temperature gauge and experiment with the oven a bit. It is also a good idea to make extra dough and cook some flat bread appetizers with it before you cook the pizza. This tests out the temperature of the pizza oven and gives you a feel for how it cooks.

You can use the infrared temperature gauge to see the exact temperature but sometimes wood fired ovens need to be a few degrees hotter or cooler than a traditional oven (depending on the exact pizza recipes you are making) because of their insulation or relative size. Also, it depends how deep the oven is. The heat will rise so it will always be hottest at the top.

Only thing I can say as regards gas BEWARE!!
Better not to play with it. However…Why not just buy a secon hand oven, cut off the top part or leave it as it is and use it for the beans and onions.
Best place to try would be any mobile home park for one of thier redundant cookers cos they will already be jetted for LPG. Regards Jeff.

How serious can smoke damage from a burnt pizza be?

Someone burned one of those big pizza‘s in the oven at my condo… It burned in there for over 3 hours at 425degree’s and filled the entire house with smoke from floor to ceiling. I’ve already aired out the whole entire house for hours, but I can’t leave the windows open forever because it’s freezing outside… Is this something we can fix ourselves or do we need a professional?

You have a real problem. I am sure that the smoke has penetrated everywhere. Your upholstered furniture needs to be cleaned, carpets shampooed, and all cloth washed. Painted surfaces need to be washed and possibly repainted. Smoke damage is very difficult to deal with and there are contractors who specialize in this area.

I hope you have homeowners’ insurance. It is time to file a claim and turn this job over to the professionals.

I have a problem with my boss and the manager at Domino’s pizza?

I have been working there since August of 2007 and I go on “leave” when a new semester begins in college but recently I cant afford to do that anymore because of my bills so I have to balance work as well as school. I found out that an employee I trained before I initially left is paid $9 an hour while I get the basic $7.25. I spoke to my manager about this and his response was ” from a business perspective he is much faster than you so he deserves more money”. Now in all honesty I have the experience of training other employees, doing deliveries, opening and closing the store, handling customer complains well etc.. The other employee however goes on 5-10 minute cig break nearly every hour or two, calls his friends and txts while working, has friends come over the store and “hangout” leaves the doors unlocked at night every now and then when he closes up the store, makes dough and goes outside to talk while leaving his work unfinished from time to time and refuses to deliver food. I am not against him I see it from the standpoint of how can someone like that a raise every 6 months to a year while I have not simply because I may or may not be as swift as he is. When people are sick I am on reserve to fill in their spots when they call off and i am friendly at work to co-workers and customers. My co-workers have told me that I deserve to be treated better and to be paid better. The manager refused to give me a raise and replied that I must call the owner to opt for a raise so I did and his response was so ” in order to qualify for a raise you must write me a detailed report on dominos operations and inspections procedure, we will talk after that”. When I inquired why people who asked for a raise and got one as recent as 6 months ago didn’t have to answer any questions and simply got a raise he text messaged me this ” you want to keep talking to other people or or just get on what I asked u. A statement about what dominos and operations and inspections procedures. is that too much to ask?…” Now the manager told employees ” that I shouldn’t act like a ***** and just take it, complaining wont help”. Besides this, the manager and owner have refused to buy employees bounty to dry our hands when we run out of hand towels we get a few from the manager but we go days without anything to dry our hands we use aprons or clothes, they tell us not to turn on the air conditioner despite working near a 456 degree oven. the thermostat indoors reads up to 93 degrees last I remember, that being the hottest day. I am not the only person feeling he/she is being treated wrongly, a driver that started working was forced to buy a drivers jacket with the company logo valued at $27 otherwise that person couldnt drive for them. A Dominos in the city has told us they purchase the jackets for the drivers to wear as part of their uniform. They also pay at $8 an hour starting while drivers here get $5.50 and next month will make $3.75 an hour. A driver in training makes less for a few months as well.
A driver that has small children was also forced to bring them into work because no babysitter could be found & the manager said if the driver wouldn’t come in they could be suspended or replaced. Her small children were in the store by our oven and around or tools which I view as dangerous. Additionally the policy is to clean dishes with water and not soap, I havent seen soup used to wash pizza cutters or any other tools we use in years (at least 2). Is there anyone that I can contact regarding this issue the Corporation accepts email from customers only not employees.
@ Aly, where I live at finding a job hiring is extremely difficult here unfortunately. I am going into my second year so I will speak to an adviser for suggestions on work but currently its sucks but I cant afford to quit and I have to combat my boss for a raise to help survive lol. If had other job offerings I would go for sure but I will try the email thank you soo much!!
I have been given soo many different numbers and bounced around its pretty difficult to find someone that can do anything. Osha transfered me over to DOL depo of labor, they shot me over to the state public safety and they sent me to some private contractor to talk too. Is there any real number that can actually do something?

How to cook a soft and chewy pizza crust?

yesterday I made pizza and the outer crust turned out hard while the middle area was still under cooked.
Here is what I did:
I rolled out the dough and also used my fingers to try and make the middle thinner. What I got when I layed the dough out on the pan was that the other bit had a big amount of dough compared to the middle part.
Next what I did was that I preheated the oven at 425 Deg F and baked the crust for 10 mins and then when I took it out it was hard (whole pizza). I also cooked it on the lower rack of the oven. Then I topped it and then put it back in the oven, this time on the top rack. I also turned down the oven heat to 400 Deg F and baked until cheese and pizza crust was golden brown.
I also lightly brushed the outer crust of the pizza with extra virgin olive oil.
End Result: Hard outer dough, under-cooked middle dough.
Question: How do I get a cooked crisp on the outside, chewy on the inside pizza crust?

veganpizzaplace answers:

Visit a Pampered Chef website. The large stone with handles is $30 which is not inflated as someone else has stated when you consider it has a 3 year warranty. That means that anytime within 3 years if it breaks or cracks you get another one FREE. Even if you drop it, you get one free. You will not find that anywhere else. If you buy one on Ebay or Craigslist you may get one cheaper but you will not get the warranty. So my advice is to shop smarter. If you need help, I can help you.

veganpizzaplace answers:

I don’t have the pizza stone, but I do have the casserole bowl, lid, loaf pan and a few other stones from pampered chef. The more you use it, the more seasoned it will get. (Brown ugly color in this case is good) NO preparations are needed, it bakes everything to a wonderful texture. I love my stoneware from PC. The only rules I go by on my stoneware (and everyone in my family knows, NO SOAP!) Sounds gross, but don’t use soap since its so pourous – it will give your food an awful soapy taste. Just use the small scrapy plastic brown square that comes with it and if you didn’t get the scraper, use a sharp metal spatula to scrape the stone under water when washing. You don’t need to prep it in the oven with oil or anything like that. Enjoy it, its a great addition to your kitchen – NO I don’t sell PC products, just happen to love them and believe in them. If your looking for more info you should be able to find it www.pamperedchef.com.

A little. Typically, I’d only order 2 pieces per person for a lunch. If you take 4 and throw it away some one may not get to eat anything. Plus, it’s pretty messy and using your fingers with food is a bit of bad manners..

You are never obligated to eat anything you don’t like, so I would just take 2 pieces to start and then go up for seconds only after everyone else has been served.

Do you have problems with pizza sticking to the peel?

I make my own pizza crust, sauce, basil grown in the backward and fresh made mozzarella from a specialty foods store. Like any other guy, I like my pizza to be tasty. After I spend all this time securing all of these top quality resources and letting my dough sit for 24 hours nothing makes me more ANGRY then having the dough stick to the peel as it crumples into a heep in the 600 degree oven.

I use semolina flour on the counter to work the dough into shape, then I pick it up and lay it on the peel which is covered in more semolina. I used to use a wooden peel but recently switched to metal to correct this problem, to no avail.

I know jerk the peel back and forth in the air to see were the dough sticks before trying to slide it into the oven. It almost always stick someplace and I have to lift the pizza with one hand and throw more semolina under it until it slides around effortlessly.

veganpizzaplace answers:

It works like a regular oven except that it circulates the hot air instead of just letting the air float naturally. This reduces the amount of time it takes to cook the pizza. Also, the temperature of the oven should be decreased as to not burn the pizza. A pizza that takes 7 minutes in a regular pizza oven, should take no more than 5 minutes in a convection (forced air) oven.

Vegetables as pizza toppings?

Hello! tomorrow night i am planning on making a very vegetastic pizza. i was just going to use a storebought crust, some pizza sauce, chicken, and some veggies. (Cheeseless)

the veggies i want to include are green/red bell peppers, mushrooms, eggplant, zucchini, and possibly onion and fresh tomatoes.

I know the peppers and mushrooms will cook just fine on the pizza while its baking, but my question is, should i precook the eggplant and zucchini before hand? will 10 minutes in the oven with the pizza be enough them to be cooked well?

Also, any other tips to help make my pizza be his very best self?
okay thanks everyone, i will pass on precooking the eggplant then.

Egg plant and zuchinni have a very short time between undercooked and over cooked. I personally do not saute’ or precook any veg on my pizza as I like the semi crisp of veggies. If you have that oven at least 450 degrees to bake that pizza as it should be, your veg will be fine, unless you like them softer. Each to his own.

Why’d this b^itch eat my pizza?

It was around half 3 am and I was starving along with my sister. So I suggested we just pop a pizza in the oven. But she was all like “no mom would be mad because it would stink up the house” and she made it clear she wouldn’t help me. So I decided to make it myself (for myself) because she’s such a pussy.
We were planning to watch a dvd too, I was providing the dvds and suggested a Japanese horror movie but she declined and said she wanted an English movie!
I told her to set the dvd up since I provided the movie but no, lazy cow don’t want to do sh’it. So I said fine i’m going upstairs then.
20 mins later the pizza was done, looked really nice! not like that burn sh’it she usually makes.
I took a small slice and put the pizza away, and went upstairs. Then 5 minutes later, when I wanted to get some more, I went down stairs only to find she had eaten about 3/4 of the pizza and then she was like “Do you want it?” (very rudely) the remaining pieces where all nibbled arounf like some rat.

Why did she eat the pizza when she said she won’t help or doesn’t want it? She was very rude when I asked her to put the DVD in but she decided to eat my pizza when my bro (who was also there) ate his own food!

can anyone Explain why the pizzas cook the way they do in the wood-fired oven?

Do the pizzas cook from the top or the bottom? Why can you eliminate particular heat transfer mechanisms?

veganpizzaplace answers:

Well, there are two kinds of wood-fired ovens. There’s the kind which is just like a gas or electric oven, except the heat is provided by a wood fire in a separate box. Then there is the hearth oven or forno, which is made of a dome of bricks and has a smooth floor. The fire may either be in the cooking chamber, or beneath the floor. I suspect this is the “wood-fired oven” you refer to, as the other type is no different from a common oven.

Cooking food is all about heat transfer. In an oven all three types of heat transfer may be present. In all ovens, heat will radiate from the sides, ceiling, and floor. This is what gives ovens their ability to cook food from all sides. Now, here’s the difference between a forno, and a normal oven. In a normal oven, extra heat is transfered to the food by the convection of hot gases from the heat source. In a forno, heat is also transfered via conduction between the floor and the bottom of the food.

So in a normal oven, food is cooked by radiation and hot air on all sides. In a forno, food is cooked mostly by radiation from above, some hot air, and conduction from the bottom. The real difference for a wood-fired oven then, is that the food is placed on a hot rock inside the oven.

As for eliminating heat transfer mechanisms, I’m not sure what you mean. Eliminating radiation in an oven is difficult, because any object placed in the oven will become hot and radiate. The best way to reduce radiation would be to place a cool object between the food and the sides/ceiling/floor of the oven. In a normal oven, the pan containing the food briefly fills this role. However, reducing radiation in an oven is kind of silly. Radiation is what an oven is all about.

As for convection, simply covering the food will help prevent that, as will heating the oven and then removing the heat source. To reduce conduction, you would want to limit the number of contact points between the food and the oven.
